Tiramisu Chapter I – with Cherry flavor Chocolate Leaf

Tiramisu is a layered Italian dessert, consisting of alternating layers of coffee-soaked (or coffee liqueur soaked) lady fingers and sweet mixture of mascarpone cheese, eggs and sugar. There is still a debate on the origin of Tiramisu.

Ingredients

  • 4 eggs
  • sugar
  • Mascarpone cheese
  • Cocoa powder
  • Coffee liqueur
  • Lady fingers

Directions

Separate the egg yolks and egg whites, beat the whites using electronic mixer until it foams firmly by adding sugar slowly. In another bowl, swirl the egg yolks and sugar, slowly add the Mascarpone cheese to get a beautiful mixture, which should look very smooth and silky. Then add the firm egg whites into the mixture, do not swirl, but fold it slowly.

Lay the first layer of soaked lady finger, spread the mixture upon it, using a flatten spatula, spoon, or knife to flatten the surface, lay the second layer of lady fingers, and the mixture again.

The most technical part would be how to make a very flat and smooth surface by paying a lot of patience.

Then you would need to have it sit in the refrigerator for at least 6 hours, let the lady fingers fully soak the mixture and liqueur. When it’s ready, sprinkle with the cocoa powder.

Tiramisu in round shape

Carefully cut the cake and serve, you can even make the chocolate leaf like me (a little distracted if the method will be introduced here ^_^) to make a presentation. You never know, it tastes so good and looks so fancy.

To serve, you can place the slice in a lift appetizer plate.

Lamb Ramen

Ingredients

  • Sliced grilled Lamb
  • Green onions
  • Bamboo shoots
  • Ramen noodels
  • 1 egg
  • Mushrooms
  • Black mushrooms
  • Pork bones
  • White miso paste
  • Seaweed
  • Sesame
  • half teaspoon of kosher salt

Directions

  • Pork broth

The process to make pork broth can be very complicated, here is an article about it. To simplify it, I just bought the pork bones from the super market, cook it using a slow cooking pot, add scallions, green onions to the soup while it’s boiling. The longer you cook, the more richness will be added to the broth.

  • The ingredients

The sliced bamboo shoots, mushrooms can be cooked together by dipping them into boiling hot water for about 3-5 minutes. Boil the egg in hot water, peel off the shell when it’s cooked. Add 1 teaspoon white miso paste into the water, 2 teaspoon Japanese soy sauce, and bring it to a boil for about 20 minutes, you will see the color of the egg darkens. Cut the egg in half to serve.

  • The noodle

I bought the Japanese dried Ramen noodles from an Asian super market, place it into boiling hot water for about 5 minutes, add cold water, then cook another 2 minutes.

  • To serve

Place the noodles in the pork broth, add the kosher salt, the eggs, bamboo shoots, mushrooms, chopped green onions, sesame, grilled lamb on top, place seaweed to the side. You can also spray the cumin powder on top of the lamb. You are ready to serve!
